Looking to get back into the game but I'm not sure of what all do I need. Do I need to go out and get the original game and do updates or just get files off of this site? I have searched but couldn't come up anything. Thank you.

In a nutshell you need 3 things
pak0.pak
pak1.pak
Qrack
Quake can also be bought fairly cheap from Steam. That would get you just about everything you need, everything else can be obtained freely.

Well the pak0 and pak 1 contain the models,sounds,levels and such while Qrack would be the engine you use to render all the cool stuff... Qrack is really just a personal preference of mine and there are many Quake clients you could use.
technically, yes that is all you need to play Quake both online and off...
However if you want to play on a server that has custom maps & mods then you would need to obtain the same mods the server hosts also.. like CTF has a flag model so you would need the CTF mod if you wanted to plat CTF.

pak0.pak & pak1.pak go in your Quake/ID1 folder and just extract the contents of Qrack into your Quake/ folder.
You should then have 3 folders.
There's no real order, just make sure you have the proper file/folder structure.
Quake/
Quake/ID1
Quake/Qrack
When you extract Qrack you should have Qrack.exe and it's DLL's in the Quake/ folder.

Yes, you'll need both paks in order to run the game. Pak0.pak can be freely obtained by getting the shareware version of quake, but Pak1.pak contains the content from the paid version.
Most servers and mods require both files. Unless you have a full Quake1 CD laying around, its easiest to get them from the steam (paid) install.
